Some years back I had baked up a batch of the best peanut butter cookies. Like legitimately good. Like the god’s handed a recipe down to mortals good. Unfortunately I’ve lost this recipe 😦 And I’m afraid that I’ll never have that recipe again…
Anyways, here’s a recipe that I THINK comes close
Here are the ingredients:
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/2 cup butter
- 1/2 cup peanut butter (I only use the Skippy brand (extra chunky), because screw Peter Pan, and screw JIF!)
- 1 egg
- 1.25 cup flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder (Today I learned that baking powder is baking soda with cream of tartar (which isn’t the same as tartar sauce))
- 1/4 teaspoon salt
Step 1) Beat the butter until creamy
Step 2) Add the sugars & beat for like 2 minutes.
Step 3) Mix in the peanut butter and egg.
Step 4) Mix in all the dry ingredients (flour, baking soda, baking powder and salt.) (You may now proceed to eat some of the batter….at this point baking it might just be a waste of time…precious, precious cookie batter eating time)
Step 5) Wrap dough in plastic and refrigerate at least 3 hours. (I’ve never done this step; don’t waste your time; eat some more cookie batter)
*** Preheat oven to 300°F *** (This is pretty much one of the most important steps, unless you’ve eaten up all the cookie batter, then you can pretty much stop here)
Step 6) Shape dough into balls and flatten into a criss-cross pattern (It’s the criss-cross pattern that unlocks the secret flavor) on a cookie sheet.
Step 7) Bake for about 15 minutes.
